Ingredients 2 cups Great Value Unbleached All-Purpose Flour 1 cup Great Value 100% Almond Flour Super Fine 1 teaspoon salt 1 teaspoon cinnamon ½ teaspoon ginger ¼ teaspoon nutmeg ⅛ teaspoon clove ⅛ teaspoon allspice 1 cup Great Value Unsalted Butter, softened ½ cup brown sugar 2 tablespoons Great Value Fancy Molasses 1 egg 1 teaspoon Great Value Pure Vanilla Extract 1 orange, zested Powdered sugar, for dusting Assorted jams for filling
Method:
Begin by mixing together the dry ingredients. In a large mixing bowl, whisk together the all-purpose flour, almond flour, salt, cinnamon, ginger, nutmeg, clove, and allspice until well combined then set aside.
In a separate bowl, use a hand mixer to combine the softened butter and sugar. Beat on medium low until light and fluffy, about 3 minutes, then add the molasses and egg. Continue to beat until well incorporated, then add the vanilla extract and orange zest. Add the dry ingredients and mix just to combine into a dough.
Divide the dough into 2 evenly sized portions, then wrap each in plastic wrap. Shape each into a 1” thick disc and place in the fridge to firm up, at least 1 hour.
Preheat your oven to 350 degrees. When the dough has cooled, add to a floured work surface. Take the first disc and flour well to avoid sticking. Roll evenly until approximately 1/8 “ thick then begin to cut out using our desired shape (using different festive shapes, about 3” wide). Place the cut out shapes onto a parchment lined (or silicone lined) baking sheet. Repeat with the second disc of dough. With the second group of shapes, cut out the centers with smaller cookie cutters - this makes the “top” of the linzer cookies that will allow the jam to peek through.
Bake the cookies in the middle rack of your oven (working in batches if necessary) for 9 - 10 minutes. Remove and allow the cookies to cool completely.
When the cookies have cooled, dollop some jam on each of the bottom halves. If using different shapes, try to allocate a unique flavour of jam for each individual shape! Then, dust the tops generously with powdered sugar.
Finally, add the sugared tops to their corresponding shape bottoms. Add to your gift box and share!
